Ingredients

  • 400g cooked prawns in shells
  • 2 anchovy fillets from a can
  • 1 red chilli
  • 4 tablespoons mayonnaise
  • 1 Little Gem lettuce
  • Lemon wedges and crusty bread , to serve

  • Rinse the cooked prawns in their shells under cold running water to remove any excess brine or ice.
  • Drain the prawns thoroughly and pat dry with clean kitchen paper.
  • Separate the Little Gem lettuce leaves, wash them well, and spin or pat dry.
  • Slice the red chilli thinly into rings; remove seeds for less heat if preferred.
  • Finely chop the anchovy fillets.
  • In a small bowl, combine the mayonnaise with the chopped anchovies and half the sliced chilli; mix well to infuse flavors.
  • Arrange the lettuce leaves in small serving bowls or plates as a fresh base.
  • Pile the dry, cooled prawns on top of the lettuce in each serving dish.
  • Spoon the anchovy-chilli mayonnaise into a small bowl or ramekin and set alongside the prawns.
