• 1 tablespoon baking powder
• 1 teaspoon salt
• 1/2 teaspoon baking soda
• 1/4 teaspoon black pepper, freshly ground
• 1 large egg
• 1 cup (240ml) buttermilk
• 1/4 cup (60ml) vegetable oil, plus more for frying
• 1/4 cup (approximately 1/2 medium) yellow onion, finely chopped
• 1 jalapeño pepper, seeded and finely minced (optional, for a kick)
