• 1 cup onion(s), chopped
• 3 cloves garlic, minced
• 1 cup winter squash, peeled, diced
• 1 red pepper, diced
• 1 tbsp olive oil
• 1/2 tsp sea salt
• 1 tsp black pepper, freshly ground
• 2 tbsp thyme, fresh, minced
• 1/2 tsp sweet paprika
• 1/2 cup Red Zinfandel wine
• 1/2 tsp pepper
