Meatball Soup

Ingredients

• 800 g tin chopped tomatoes
• 1 large onion, (peeled and sliced)
• 1 large carrot, (sliced into rounds)
• 4 garlic cloves, (peeled and minced)
• 1 tbsp balsamic vinegar
• ½ tsp dried basil
• ½ tsp dried oregano
• 1 litre pork or beef stock; (1 stock cube made up with 1 litre boiling water)
• low-calorie cooking spray
• salt and pepper, (to taste)
• 250 g 5% fat pork mince
• 1 tbsp tomato puree
• 1 tbsp Henderson's relish or Worcestershire sauce
• ½ tsp paprika
