• 4 (6-ounce) salmon fillets, bone-in and skin-on, patted dry
• kosher salt, to taste
• freshly ground black pepper, to taste
• 1 1/2 tablespoons unsalted butter
• 2 cloves garlic, minced
• 1 medium shallot, diced
• 2 tablespoons all-purpose flour
• 1/4 cup dry white wine, such as sauvignon blanc
• 3/4 cup chicken stock
• 3/4 cup half-and-half
• 3 cups baby spinach
• 2 tablespoons fresh dill, chopped
• 1 lemon, optional, sliced into wedges, for serving
