Creamy Chicken Gnocchi Soup - foodsofjane

Ingredients

• 3-4 tbsp butter
• 3/4 cup diced onion
• 1 cup diced carrots
• 1 cup diced celery
• 1 bay leaf
• 1/2 tsp salt
• 1/4 tsp black pepper
• 2 garlic cloves, grated
• 1 tbsp lemon zest
• 1.5 tbsp arrowroot starch (you can use flour or any other thickening agent)
• 32 oz chicken broth (I used half chicken bone broth and half regular chicken broth)
• 1/4 cup heavy cream
• 1 cup shredded chicken
• 2 cups of uncooked gnocchi
• optional: chopped spinach or kale leaves
