Hoisin Vinaigrette Chopped Salad
This salad really is a celebration of textures! Tender leafy greens, crisp cucumber, juicy mandarins, creamy edamame, and crunchy almonds are deliciously bathed in Hoisin Vinaigrette.
Ingredients
- 1 head romaine or leaf lettuce, chopped
- 2 heaping cups chopped baby bok choy, tatsoi, or baby spinach leaves
- 1 English cucumber, sliced
- 6 green onions, white and green parts, sliced
- 1/2 bunch of cilantro, leaves and stems, chopped
- 3 mandarin oranges, peeled and separated into segments
- 8 oz. shelled edamame (defrosted, if from frozen)
- 1/3 cup prepared hoisin sauce
- 1/3 cup avocado oil
- 1/4 cup rice vinegar
- 1/4 tsp. ground black pepper
- 1 Tbsp. sesame seeds
- 1 tsp. toasted sesame oil
- 1 cup sliced almonds
- 2 Tbsp. fish sauce (or tamari)
