Ingredients

• 12 to 15 large ribs (or stalks) of celery (5 cups chopped)
• 3 tablespoons olive oil
• 1 large onion, chopped
• 1 tablespoon roasted garlic, minced
• 2 tablespoons unbleached white flour
• 3 medium russet potatoes, peeled and diced
• 5 cups hot water (approximate)
• 1 tablespoon Better Than Bouillon No Chicken Base (or one vegetable bouillon cube)
• 1/2 teaspoon seasoned salt
• 2 tablespoons parsley
• 1/2 teaspoon dill weed
• 1/2 teaspoon celery salt
• 1/8 to 1/4 teaspoon cayenne
• 1/2 cup soy creamer
• salt and freshly ground black pepper
