Ingredients

• 2 tablespoons olive oil
• 1 onion, chopped
• 4 cups thinly sliced celery stalks (about 1 lbs. or a large head of celery)
• 2 Yukon gold potatoes, chopped
• 3 cloves garlic, minced
• 4 cups vegetable broth
• 1 (13.5 oz) can coconut milk
• 2 cups fresh baby spinach
• ¼ cup fresh dill
• ¼ cup fresh parsley
• ½ lemon juiced
• Sea salt and freshly ground black pepper, to taste
