Ingredients

• 1 lb (0.5 kg) ground chicken
• 3 1/2 cups (875 mL) mushrooms, chopped (mix of Cremini, Shitaki and button )
• 2 cups (500 mL) Spanish onion, chopped
• 4 tbsp (60 mL) garlic cloves, chopped
• 1 medium sweet red pepper, diced
• 1 tbsp (15 mL) fresh oregano, chopped
• 1/2 cup (125 mL) chicken broth
• salt, to taste
• 3 egg whites
• 1/2 cup (125 mL) low-fat, feta cheese, crumbled
• 4 phyllo pastry leaves

• 30 fresh sage leaves
• 1 tbsp (15 mL) fresh thyme, leaves removed from stems
