Rustic Style Potato Salad - Lavender and Lovage

Ingredients

• 900g potatoes, peeled (I used Sainsburys So Oragnic British Potatoes)
• 2 -3 tablespoons low-fat mayonnaise
• 2 -3 tablespoons low-fat creme fraiche
• 50g finely diced cornichons
• 6 finely chopped spring onions
• 1 -2 tablespoons liquid Maggi seasoning
• 2 hard-boiled eggs, diced (I used Sainsburys Free-Range eggs)
• freshly ground black pepper
• 1 red onion, peeled & finely diced
