Lynn's Recipes - Queso Chicken Pasta

Ingredients

• 8 ounces penne pasta, (I used whole wheat)
• 2 teaspoons vegetable oil, (I used Olive Oil)
• 1 cup diced onion
• 2 cloves garlic, minced
• 1 jalapeno pepper, minced
• ½ teaspoon cumin
• ¼ teaspoon coriander
• 1 Tablespoon flour
• 1-1/3 cup milk
• 1 teaspoon salt
• 3 Tablespoons cream cheese, (I used reduced fat)
• 6 ounces Colby-Jack cheese, divided
• ½ cup drained Rotel tomatoes
• 2 cups cooked, shredded chicken
