Spinach, White Bean and Bacon Salad with Maple-Mustard Dressing

Ingredients

• 1/4 cup maple syrup
• 3 Tbl cider vinegar
• 1 Tbl Extra virgin olive oil
• 1 Tbl Dijon mustard
• 1/4 tsp salt
• 1/4 tsp Freshly ground pepper
• 1 can (15 oz) great northern beans rinsed and drained
• 1/2 cup Green onions thinly sliced
• 1/2 cup Red bell pepper finely chopped
• 5 slices bacon cooked and crumbled
• 2 (7 oz) pkgs Baby spinach
