• 1/2 large onion (chopped)

• 1/2 teaspoon salt
• 1/4 to 1/2 teaspoon freshly ground pepper
• 4 cups cooked chicken, chopped (used Rotisserie)
• 10 3/4 ounces condensed cream of chicken soup, undiluted (1 can)
• 1 cup sour cream
• 1/2 cup milk
• 1 to 2 teaspoons finely chopped fresh rosemary
• 2 ounces pimento, chopped (1 jar)
• 2 cups shredded aged cheddar cheese, divided

• 1 cup all-purpose flour
• 1 teaspoon granulated sugar
• 2 teaspoon baking powder
• 1/4 teaspoon cream of tartar
• 1/4 teaspoon salt
• 1/4 teaspoon baking soda
• 1/4 cup shortening (solid Crisco)
• 1/4 cup buttermilk (or enough to make a sticky dough)
• 1 teaspoon basil
