Ingredients
- 60 ml (1/4 cup) extra virgin olive oil
- 1 onions, finely chopped
- 2 red peppers and/or yellow, diced
- 125 ml (1/2 cup) maple syrup (preferably golden syrup for its delicate flavour)
- 330 ml (1) <span data-teams="true">a bottle of local beer</span>
- 1 L (4 cups) <span data-teams="true"> vegetable stock</span>
- 500 L (2 cups) <span data-teams="true">long grain rice (rinse before cooking!)</span>
- Salt and pepper, to taste
- 4 <span data-teams="true">local apples</span>
- 125 ml (1/2 tasse) <span data-teams="true">chopped coriander</span>
