Ingredients

• 100 g Lurpak® Soft Light Salted
• 1 tbsp coriander seeds, crushed
• 1 tbsp cumin seed
• 1 tbsp ground cinnamon
• ½ tbsp dried oregano
• 1 kilo chicken thighs and drumsticks
• 2 lemons, cut into slices
• 2 large red onions, cut into wedges
• 3 large potatoes, skin on and cut into 2cm chunks
• 8 garlic cloves, skin on and crushed
• salt and black pepper to taste
• 1 bunch of fresh coriander, roughly chopped
