- 3 tomatoes, cut into ½-inch slices
- ½ cup olive oil
- ¼ cup balsamic vinegar
- Pinch of salt and black pepper
- 1¼ cup water
- ½ teaspoon citric acid
- ¼ teaspoon liquid rennet
- 1 gallon whole milk
- 1 teaspoon kosher salt
- 1 baguette, sliced
- 1 cup fresh herbs of your choice
