Ingredients

• 2 medium leeks, separated into green and white parts
• 1 red capsicum, diced
• 2 garlic cloves, finely chopped
• 250g mushrooms, finely chopped
• 200g feta cheese, crumbled
• Handful of fresh coriander (optional)
• Handful of fresh mint leaves (optional) *Can be substituted with dried herbs.
• 1 tsp ground cumin
• 1 tsp ground turmeric
• 1 tsp ground paprika
• Salt
• pepper
• 1 tbsp olive oil
