• 2 cups spinach, chopped
• 1 1/2 cups provolone, pecorino Romano, or asiago cheese, shredded
• 1/2 cup parmesan, grated
• 1 pound penne or other short pasta
• 1/2 pound fresh mozzarella, shredded
