Ingredients

  • 1 cup flour
  • 1 12-oz. package firm tofu, cut into 1/2" cubes and patted dry
  • 10 tbsp. ghee
  • 2 tsp. mustard seeds
  • 2 tbsp. peeled freshly grated ginger
  • 1 tbsp. ground coriander
  • 1 tsp. ground turmeric
  • <sup>1</sup>⁄<sub>2</sub> tsp. asafetida
  • 1 serrano chile, stemmed and finely chopped
  • <sup>1</sup>⁄<sub>2</sub> small head cabbage, cored and thinly sliced
  • 1 cup frozen peas, thawed
  • Kosher salt, to taste
