Tuna Biryani

Ingredients

• 3-4 tbsps Extra Virgin Olive Oil
• 4 onions – chopped
• 4 garlic cloves – chopped
• 4 cans Fancy Meat Tuna in water, drained
• 1 tomato, peeled & chopped
• 2 tbsps Tomato Paste
• 200 ml small yogurt
• 3 dried chilies
• 1/2 cup ground coriander
• 2 tbsps parsley, chopped
• Biryani spices
• 2 cinnamon sticks
• 1 dried lemon
• 4 cardamoms
• 4 cloves
• 2 bay leaves
• 8 seeds fresh black peppers
• 1 tsp turmeric
• 1 tsp Allspice
• 1 tsp Paprika
• 1/2 tsp biryani ground spices
• Salt to taste
• Rice
• 2 tbsps Extra Virgin Olive Oil
• 2 1/2 cups basmati rice, washed & soaked for 15 min
• Lots of water cover above rice
• 1 tbsp fresh mint – chopped
• Saffron, soaked in 1 tbsp rose water & 2 tbsps lukewarm water
• Garnish
• Fried onions
• Parsley
