- 1/2 small red onion (thinly sliced (or use green onion instead))

- 3 - 4 tablespoons apple cider vinegar
- 3/4 cup extra-virgin olive oil
- 1/2 tablespoon Dijon mustard
- 2 -4 tablespoons water
