Ingredients

• 10 drumsticks (700g), skin on
• 3 tablespoons oil, plus extra for greasing the tray
• 3 cloves of garlic, minced
• 4 tablespoons soy sauce
• 4 tablespoons sriracha sauce
• 3 tablespoons runny honey
• ½ teaspoon ground star anise
• 2 tablespoons cornflour
• 567g tin of new potatoes, halved
• 1 carrot, peeled and grated
• 6 tablespoons mayo
• 2 pickled eggs, grated
• 1 heaped tablespoon wholegrain mustard
• 1 tablespoon honey
• a large handful of chopped fresh chives
• a good pinch of salt
• chopped fresh coriander, to serve
