Ingredients

• 2 tbsp butter, divided
• 1/2 bell pepper, thinly sliced
• 1/4 white onion, thinly sliced
• 3 white mushrooms, sliced
• 3/4 tsp salt
• 1/2 tsp ground black pepper
• 2 small garlic cloves, minced
• 1/2 lb butterflied and chopped chicken breasts, see notes
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp old bay seasoning
• 1/4 tsp chili powder
• 2 8-inch sub rolls, see notes
• 4 slices provolone cheese, see notes
