• 1/2 pound dry Oaxacan Black Beans, Eye of the Goat, Black Tepary Beans or Bayo
• 1 Tablespoon Salt
• 1 Clove of Garlic (optional)
• 1/4 cup Extra Virgin Olive Oil
• 2 Large Garlic Cloves Minced
• 2 Shallots (or one small onion) Finely Diced (about 1/3 cup)
• 1 Tablespoon Piment d'Ville
• 1 Teaspoon mexican oregano
• 1 Teaspoon salt
• 4 Tablespoons tomato paste
• 1 cup grated mozzarella 
• 1 cup grated white cheddar
