• 6 plum tomatoes medium dice (1/2 to 3/4 inch)
• 1 large clove garlic (minced very fine)
• 1/2 cup extra virgin olive oil
• 4 or 5 large basil leaves
• 1/3 cup minced flat leaf parsley
• 15-20 oil cured black olives pitted and roughly chopped
• 1 cup crumbled dry ricotta or feta
• Salt & pepper to taste
