• 1/2 tablespoon olive oil
• 1 ounce (1/4 cup) freshly grated Parmesan cheese
• 1/8 teaspoon pepper
• 1/4 teaspoon salt
• optional garnish: fresh thyme
• 2 pounds yellow onions (about 3 onions), thinly sliced
