Ingredients

• ½ tablespoon olive oil
• 1 red onion
• 1 large courgette
• 1 red pepper
• 1 yellow pepper
• 2 cloves garlic, crushed
• 1 can chopped tomatoes
• 1 can butterbeans, drained
• ½ can kidney beans, drained
• Freshly ground black pepper
• 1 tsp mixed herbs
• 500g sweet potatoes
• 250g carrots
• 60g Flora Lighter
• 80g cheddar cheese, grated (optional) or vegan cheese
• 180g mixed salad leaves
