Mortadella Meatloaf – Volpi Foods

Ingredients

• 5 tablespoons orange marmalade or apricot preserves
• 1 ½ teaspoon dry mustard
• 1 slice sandwich bread, crust removed, torn into 1-inch pieces
• 1/3 cup whole milk
• 2 large eggs
• 1 small onion, grated on the large holes of a box grater
• 1 carrot, finely grated
• 2 cloves garlic, finely minced or grated
• 6 ounces Mortadella , minced (1 1/2 cups)
• 1/3 cup chopped fresh parsley
• ¼ cup grated Parmesan cheese
• ¼ cup shelled roasted, salted pistachios, coarsely chopped
• 1 ½ teaspoon Kosher salt
• ¼ teaspoon freshly ground black pepper
• 1 pound ground beef
• ¾ pound ground pork
• one 9-inch-by-5-inch loaf pan
