Ingredients

  • 8 cloves garlic, minced
  • 3 jalapeño chiles, seeded and finely chopped
  • 2 tablespoons firmly packed light brown sugar
  • 1 tablespoon kosher salt
  • 1/4 cup orange juice
  • 1/4 cup fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 3 1/2- to 4-pound chuck roast, bone-in or boneless
  • 1/2 cup lightly packed chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 1/2 cups long-grain white rice
  • 3 cups low-sodium chicken stock, broth or water
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon crushed dried oregano
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 2 cups cooked black beans or one 14-ounce can black beans, drained and rinsed
