• 500g piece of fillet
• Olive oil
• Wild rocket, for garnishing
• Dukkah
• 1/4 cup hazelnuts
• 1/4 cup macadamia nuts
• 1/4 cup sesame seeds
• 1 1/2 Tbsp coriander seeds
• 1 1/2 Tbsp cumin seeds
• 1/2 tsp black peppercorns
• 1/2 tsp smoked paprika
• 1/4 tsp sugar
• 1/4 tsp salt
