Ingredients

• 2 tablespoons olive oil
• 1 small onion, diced
• 1 shallot, diced
• 2 cloves garlic, chopped
• 3-4 medium sized sweet potatoes (about 2 pounds), peeled cut into 1-inch cubes
• 4 cups chicken (or vegetable) stock
• 1/2 teaspoon cinnamon
• 1 teaspoon paprika
• 1 -2 teaspoons salt
• Fresh ground pepper
