Ingredients

• 5 tablespoons (75 g) unsalted butter
• 4 small sweet onions, very thinly sliced
• 1 large white cabbage, cored and very thinly shredded (about 15 cups; 1.8 kg)
• 1 tablespoon sweet paprika
• 5 cups (1.25 l) Basic Chicken Stock or commercial chicken broth
• 1 teaspoon caraway seed
• 1 tablespoon kosher salt, or to taste, or less if using commercial broth
• 2 tablespoons fresh lemon juice
• Freshly ground black pepper, to taste
