Ingredients

  • 100 gm (2/3 cup) pomegranate seeds
  • 1/3 cup butter,
  • 3/4 cup onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 100 gm fresh mushrooms, chopped
  • 1 1/2 tsp dried sage leaves
  • 3/4 tsp dried thyme
  • 1 1/8 tsp dried summer savory
  • 1 tsp salt
  • 1/2 tsp pepper
  • 100 gm prosciutto, finely chopped
  • 4 cups (150 gm) small bread cubes, dry
  • 1 cup (220 gm) COOKED pearl barley (You will need 1/3 cup uncooked to make this amount.)
  • 1 1/2 cups chicken or vegetable broth (Add ONLY enough to make a proper stuffing consistency)
  • 1.3 kg (2 1/2 LBS) boneless/skinless turkey breast, butterflied
  • 1-2 Tbsp butter,
  • 1/2 tsp EACH parsley, rosemary, sage leaves & thyme
  • 1/2 tsp smoked paprika
