• 1 1/4 cups flour
• 1 lemon (zest)
• 1 tsp ground cinnamon
• 1/4 tsp ground cloves
• 1/2 cup sugar
• 1/4 tsp salt
• 1 stick butter, chilled
• 1 egg
• 13 oz high-quality raspberry jam
• 1 egg yolk
• 1 tsp water
• butter for greasing
• flour for dusting
