• 500g NZ beef schnitzels
• ½ cup plain flour
• 2 large eggs, beaten
• 1 cup cornflakes, lightly crushed
• 1 tsp garlic powder
• 1 tsp chives or parsley, finely chopped
• ½ tsp smoked paprika (optional)
• Salt and freshly ground black pepper to taste
• Olive oil spray
• 1 capsicum, chopped
• 1 courgette, chopped
• 1 red onion, cut into wedges
• 200g baby potatoes, halved
• 1 Tbsp olive oil
• 1 tsp dried rosemary
• Salt and pepper to taste
• 50g salad greens or baby spinach
• Juice of ½ lemon
