I am definitely having somewhat of an 80's food revival this week, and what better way to do this than with an Arctic Roll.

Ingredients
- 500 750g good quality ice cream, I used my Simple Ice Cream recipe
- 3 eggs
- 100g caster sugar
- 100g plain flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 extra tablespoon caster sugar
- Approx 6 tablespoons jam, strawberry or raspberry is good
- Berries and cream to serve
