Ingredients

  • 2 pork tenderloins, 1 pound each, trimmed of fat
  • 1/3 cup organic less-sodium chicken broth
  • 2 tablespoons extra virgin olive oil, divided
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme leaves
  • 1 1/2 cups sweet cherries, pitted and chopped (dried cherries will work as well as they will rehydrate)
  • 1/3 cup finely chopped Spanish onion
  • 1/3 cup sugar (raw if you have it)
  • 1/3 cup apple cider vinegar (your standard vinegar works too)
  • 1 1/2 tablespoons minced fresh ginger
  • 1 1/2 teaspoons yellow mustard seed
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon coarsely ground black pepper
  • 1 1/3 cups finely chopped tomatoes or cherry tomatoes
