Ingredients
- 2 pork tenderloins, 1 pound each, trimmed of fat
- 1/3 cup organic less-sodium chicken broth
- 2 tablespoons extra virgin olive oil, divided
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme leaves
- 1 1/2 cups sweet cherries, pitted and chopped (dried cherries will work as well as they will rehydrate)
- 1/3 cup finely chopped Spanish onion
- 1/3 cup sugar (raw if you have it)
- 1/3 cup apple cider vinegar (your standard vinegar works too)
- 1 1/2 tablespoons minced fresh ginger
- 1 1/2 teaspoons yellow mustard seed
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon coarsely ground black pepper
- 1 1/3 cups finely chopped tomatoes or cherry tomatoes
