Ingredients

• 4 chicken breasts, with skin and bone
• Salt and freshly ground pepper to taste
• 2 tablespoons butter
• 1/2 cup finely chopped onion
• 1 teaspoon chopped garlic
• 1/3 pound fresh mushrooms, left whole if very small, otherwise sliced or quartered depending on size
• 1 bay leaf
• 1/2 cup dry white wine
• 1/2 cup raw rice
• 1 cup chicken broth
