'Hearty' Chicken and Vegetable Soup

Ingredients

• 1 tbs coconut oil
• 4 cloves garlic, minced
• 1 large onion, diced
• 2 medium carrots, diced
• 2 stalks celery, thinly sliced
• 2 medium zucchini, diced
• 300 g butternut pumpkin, peeled, cubed
• 2 cups broccoli, cut into florets
• 1/2 bunch kale, stalks removed, shredded
• 400 g poached chicken, shredded
• 2 litres homemade chicken broth
• 1 handful parsley, chopped
• 2 sprigs thyme
• 1 bay leaf
