- 1 large shallot, minced
- 1 large clove garlic, minced
- 2 tablespoons flour
- 2 cups low-sodium (or homemade) chicken or beef stock
- 2 tablespoons Worcestershire sauce
- 3/4 cup smoked Gruyère cheese, or to taste, at room temperature
