2025 seems to be a good year for cucumbers. We’ve already made our usual cucumber pickle so we’re making cucumber relish as well.

- 1 red onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1/4 cup vinegar
- 1/4 cup sugar
- 1 tsp salt
