• 1 cup dried black-eyed peas, SOAKED AND DRAINED
• 4 cups water
• ½ teaspoon salt
• ½ cup vegetable oil
• 1 teaspoon cumin seeds
• 1 (1-inch) cinnamon stick
• 1 cup red onions, chopped
• 4 garlic cloves, minced
• ½ pound button mushrooms, cleaned and sliced
• 1 pound ripe tomatoes, blanched and chopped
• 2 teaspoons ground coriander
• 1 teaspoon ground cumin
• ½ teaspoon turmeric
• ¼ teaspoon paprika
• Salt to taste
• 2 tablespoons fresh cilantro, chopped
