Ingredients

• 1 cup Arborio Rice
• 4 cups chicken or vegetable broth
• 1/2 cup white wine for cooking
• 1 onion, finely chopped
• 2-4 cloves of garlic, minced
• 8oz. or so of mushrooms, sliced
• 3/4 -1lb. broccoli raab, chopped
• 1 tbsp. butter
• 1 tbsp. olive oil
• 1 tsp. fresh lemon thyme, chopped
• 2 Bay leaves
• Salt & Pepper
• 1/4 cup freshly grated parmesan
