Ingredients: 2 cups of cooked lentils (I used black lentils); 4-5 small steamed beets with skin off cut in small pieces; Bruschetta: either follow bruschetta recipe recipe I recommend Trader’s Joe’s brand 1 jar; 1 tblsp cilantro chopped; 1 tsp olive oil (additional to Bruchetta’s recipe); Salt to taste; 1 tsp lemon to taste
