Ingredients

• 4 cups Fresh raspberries, divided
• 3/4 cup Granulated sugar, divided
• 1 tbsp Freshly grated lemon zest
• 1/3 cup Freshly squeezed lemon juice
• 3 tbsp Cornstarch
• 2 Eggs
• 2 Egg yolks
• 1/4 cup Unsalted butter
• 1/2 cup Heavy or whipping (35%)
• 1 tbsp Cream confectioners’ (icing) sugar
• 1 tsp Vanilla extract
