Earl's Mozzarella Meat Loaf Recipe

Ingredients

• 1 lg Onion; coarsely chopped
• 1 tablespoon Olive oil
• 1 Sweet red pepper; chopped
• 1 cl Garlic; finely chopped
• 1 teaspoon Leaf basil; crumbled
• ½ teaspoon Lef thyme; crumbled
• 1½ lb Lean ground beef
• ½ lb Ground pork
• 1 cups Old-fashioned oats; uncooked
• 2 Egg whites
• 4 oz Part-skim mozarella cheese
• ½ cups Grated Parmesan cheese
• 2 tablespoon Parsley; chopped
• ¾ teaspoon Salt; optional
• 1/8 teaspoon Pepper
• ¼ cups Catsup
