Sweet Potato Casserole – Alberta Co-op
Preheat oven to 350 degrees F. Butter or oil a 9 x 13 casserole dish. Peel and chop the sweet potatoes into medium-sized chunks.

- 2 eggs (Beaten)
- 1/2 Cup maple syrup
- 2 Tablespoons butter (Melted)
- 1/3 Cup coconut milk
- 1/8 Teaspoon nutmeg (Ground)
- salt (To Taste)
- pepper (To Taste)
- 1/2 cup pecans (Chopped)
- 1 Tablespoon maple syrup
