Carrot olive oil cake – Cakes and Bakes

Ingredients

• 1 cup all-purpose flour
• 1 cup whole wheat pastry flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp freshly grated nutmeg
• ½ tsp ground ginger
• 1 tsp sea salt
• 3 large eggs
• 1 ¼ cups sugar
• 2 cups grated carrots, from about 3 medium carrots
• 2 tbsp grated orange zest
• 1 tsp vanilla extract
• 1 cup extra virgin olive oil
• 4 oz cream cheese, room temperature
• ½ cup Icing sugar
• ½ tsp vanilla extract
