Ingredients

• 1/4 Cup Cherry Tomatoes, halved
• 1/4 Cup Fresh Mozzarella Balls (optional)
• 1/2 Cup Torn Fresh Basil Leaves and/or Baby Spinach
• 1/2 Cup Martin’s Sweet Party Potato Rolls, stale or lightly toasted, cubed
• For Balsamic Vinaigrette Dressing:
• 2 Tablespoons Extra Virgin Olive Oil, divided
• 2 Teaspoons Balsamic Vinegar
• 1/4 Teaspoon Honey
• 1/4 Teaspoon Dijon Mustard
• 1/4 Clove Garlic and/or Shallot, minced (optional)
• 1 Pinch Salt and Black Pepper
